By a wide window in the restaurant you can admire the wonderful panorama, while you are tasting typical dishes, made according to the oldest local recipes, like “Strascinati pasta ”, Farro soup, “Fettuccine” with black truffle, Lentils, Pecorino cheese, the lamb, mushrooms.
Our way of cooking is very rich in typical dishes and local ingredients.
All the recipes are based on Umbrian products of rural life, in particular black truffles, pork meat, like ham and sausages. All the dishes are dressed with a special olive oil.
There are also dishes linked to our traditions, like FARRO (Triticum Dicoccum), cereal mostly tilled in Monteleone di Spoleto and “Strascinati pasta ”, cooked according to the old recipe from 1494.
